Joanne, one thing I...You're welcome, you guys! Joanne, one thing I've heard can affect the cheese curdling is acid levels--a not very acidic lemon might not make the milk curdle. In canning they say to use bottled lemon juice to make sure the acid levels are correct, so that might be something to consider. Pasteurization levels might also be a thing, but I doubt it--I've used standard supermarket milk every time I've done this.
