Three quinoa lunches
What can you make with leftover quinoa in the refrigerator?
Well, you could make fried not-rice by sautéing green onion, mushrooms, and green beans with quinoa, seasoning with red pepper flake, salt, and pepper, adding a handful of greens, and cracking an egg or two into the pan. Scramble to your liking and eat with a handful of torn parsley.
Or you could mix cold quinoa with quartered cooked beets, salad greens, chunks of goat or cream cheese, and lots of black pepper. VoilĂ : a tasty and practically instant salad. It's a clear winner in the "looks a mess; is delightful" category.
And of course, you could always use your quinoa for its intended purpose: as a base for a bowl of curry, stir-fry, or thick stew. I sautéed mine with sweet potato and lentil curry and a few leaves of chopped red chard.
Hooray! Quinoa wins!

I love the idea of using quinoa as a fried rice substitute (although I'm torn between that and the beet and goat cheese salad). I'm really enjoying your posts offering a variety of different options for a dish!
great way to use leftovers -- leftover grains are my fave to work with because the possibilities are endless.
I have never had quinoa, I might be one of the last people to have not tried it :) It really looks delicious.

So many quinoa ideas! I have no excuse for buying it then leaving it sitting reproachfully in the cupboard.
YUM, love these ideas! I adore quinoa, and sometimes just cook it up so I have the leftovers in the fridge - so versatile! I think my favorite way is stirred up with roasted veggies and chickpeas with some balsamic vinaigrette.

Haha I think a lot of my dishes fall into the "looks a mess; is delightful" category. And that beet dish sounds the yummiest use for quinoa to me!
I love quinoa! it's so versatile. I do love rice, but quinoa is perfect for changing things up. I like them most in some sort of salad (tabouli!) or to replace couscous as a gluten-free nutty alternative! thanks for the compilation of ideas (:
